做(zuò )法:春笋切成(chéng )片后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱(cōng )切(qiē )成段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分(fèn )钟左右。再加(jiā )入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大(dà )火煮(zhǔ )开后(hòu )转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀(yún )稍收汁时(shí )盖上锅盖焖。
