做(zuò )法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟左(zuǒ )右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清(qīng )水半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后转中火。煮到(dào )水(shuǐ )快(kuài )熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。 -
