做法:洗净(jìng )宰(zǎi )好鲫鱼,洗净淮山和薏米。用清水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在(zài )锅(guō )上擦一遍(biàn ),放两(liǎng )勺油(yóu ),待(dài )油六成热下鱼,煎至微黄。煮沸瓦煲里(lǐ )的清水,放入煎煮好的鲫鱼和其(qí )他材料,武火煮沸,转(zhuǎn )中小(xiǎo )火(huǒ )煲一(yī )个半(bàn )小时,下盐(yán )调味即可品尝。
