做法:春笋切成片后加少许(xǔ )盐捞出(chū )后用清(qīng )水浸泡,生姜切片,葱(cōng )切(qiē )成(chéng )段。锅烧热(rè ),倒入2勺油(yóu ),放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分(fèn )钟左右(yòu )。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅盖大火(huǒ )煮开后(hòu )转中火。煮到水(shuǐ )快熬干的时候(hòu )加入(rù )盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
