做法(fǎ ):春笋切成片后加少(shǎo )许盐捞(lāo )出后用清水浸(jìn )泡,生姜切片,葱(cōng )切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入(rù )生姜、春笋、牛(niú )肉片(piàn )、葱(cōng )段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春(chūn )笋(sǔn ),盖上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
