做法(fǎ ):春笋切成片后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成(chéng )段。锅(guō )烧(shāo )热,倒入2勺油,放入生(shēng )姜、春笋(sǔn )、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入(rù )少量清水半(bàn )掩住春(chūn )笋,盖(gài )上锅盖大火煮开后(hòu )转中火。煮到水(shuǐ )快熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖(mèn )。
