做法:洗净宰好鲫(jì )鱼,洗净淮山和薏米。用清水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块(kuài )在(zài )锅上(shàng )擦一遍,放(fàng )两勺(sháo )油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清(qīng )水,放入煎(jiān )煮好的鲫鱼和其他材(cái )料(liào ),武(wǔ )火煮(zhǔ )沸,转中小火煲一个半小时,下盐调(diào )味即可品尝。
