做法:春笋切成片后加少许盐(yán )捞出后(hòu )用(yòng )清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱(cōng )段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老(lǎo )抽、蚝油(yóu )翻炒均匀(yún ),加入少量(liàng )清水半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时(shí )候(hòu )加入(rù )盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖。
