做法:春(chūn )笋切成片后加(jiā )少许盐(yán )捞出(chū )后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再加入(rù )生抽、老抽、蚝油翻(fān )炒均匀,加(jiā )入(rù )少量清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大火煮开后(hòu )转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
