做法:春笋(sǔn )切成片(piàn )后加少许(xǔ )盐捞出后用清水(shuǐ )浸泡(pào ),生(shēng )姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入(rù )少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
