做法:春笋切(qiē )成(chéng )片后加少许盐捞出后(hòu )用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放(fàng )入生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后(hòu )转中火。煮到水快熬干(gàn )的时(shí )候加入(rù )盐,翻炒均匀稍收(shōu )汁时盖上锅(guō )盖焖。
