做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱(cōng )段翻炒(chǎo )1分(fèn )钟左右。再加入生抽(chōu )、老抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量清(qīng )水半(bàn )掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时候(hòu )加入盐,翻炒均匀(yún )稍收汁时(shí )盖(gài )上锅盖焖(mèn )。
