做法:洗净宰(zǎi )好鲫鱼,洗(xǐ )净淮山和薏米。用清(qīng )水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅,用姜块在锅(guō )上擦一遍,放(fàng )两勺油,待油六成热下(xià )鱼,煎至微黄。煮沸瓦煲(bāo )里(lǐ )的清水,放入(rù )煎煮(zhǔ )好的鲫鱼和其(qí )他材(cái )料,武火煮沸,转中小火煲(bāo )一个半小时,下盐调(diào )味即可品尝(cháng )。
