做(zuò )法:洗净宰好鲫鱼,洗净淮山和薏(yì )米(mǐ )。用清水把陈皮泡软,拍裂一小块姜(jiāng ),热(rè )锅,用姜块在(zài )锅(guō )上擦一遍(biàn ),放两勺油,待油六成热下鱼,煎(jiān )至微(wēi )黄。煮沸瓦煲(bāo )里(lǐ )的清水,放入煎煮好的鲫鱼和其他材料(liào ),武火煮沸,转中小(xiǎo )火煲一个半小时(shí ),下(xià )盐调味即可品尝。
