做法:春笋切成(chéng )片后加少许盐捞出后用清水浸(jìn )泡,生姜切片(piàn ),葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油(yóu )翻炒均(jun1 )匀,加(jiā )入少量清(qīng )水半掩住春笋,盖上(shàng )锅盖(gài )大火煮(zhǔ )开(kāi )后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖(mèn )。
