做法(fǎ ):春笋切成片后加少许盐(yán )捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒(chǎo )均(jun1 )匀,加入少量清(qīng )水半(bàn )掩住(zhù )春(chūn )笋,盖上锅盖大火煮开(kāi )后转中(zhōng )火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖(gài )上锅(guō )盖焖。
