做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡,生(shēng )姜切(qiē )片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分(fèn )钟左右。再加入生抽(chōu )、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩(yǎn )住春笋(sǔn ),盖上锅(guō )盖大火煮开后(hòu )转中火。煮到(dào )水快熬干的时候加(jiā )入盐,翻炒均(jun1 )匀稍收汁时(shí )盖上锅盖(gài )焖(mèn )。
