做法:春笋切成片后加少许盐捞(lāo )出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟左右。再(zài )加入生抽(chōu )、老抽、蚝油翻(fān )炒(chǎo )均(jun1 )匀,加(jiā )入少量清水半掩住(zhù )春(chūn )笋,盖上(shàng )锅盖大(dà )火(huǒ )煮开后转中火。煮到水(shuǐ )快熬干的(de )时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
