做法:洗净(jìng )宰好鲫(jì )鱼,洗净淮山和薏米。用(yòng )清(qīng )水把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上(shàng )擦(cā )一遍,放两勺油,待(dài )油六(liù )成热下鱼,煎至微黄。煮沸瓦煲里的清(qīng )水(shuǐ ),放入煎煮好的鲫鱼和其他材料,武火煮沸,转中(zhōng )小火煲一个(gè )半(bàn )小时,下(xià )盐调味即(jí )可品尝。
