做(zuò )法:春笋切成片后(hòu )加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟(zhōng )左右(yòu )。再(zài )加入(rù )生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮(zhǔ )到水快熬(áo )干(gàn )的时候加入盐,翻(fān )炒均匀稍收(shōu )汁时盖上锅(guō )盖焖。
