做法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半(bàn )掩住春笋,盖上锅盖(gài )大(dà )火煮开后转(zhuǎn )中(zhōng )火。煮到水(shuǐ )快熬(áo )干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖(mèn )。
