做法:春笋切成片后加(jiā )少许盐捞出后用清水(shuǐ )浸泡,生姜切(qiē )片,葱切成段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽(chōu )、蚝油翻炒均匀,加入少量(liàng )清水半掩住(zhù )春笋,盖上锅盖大火(huǒ )煮开后转中(zhōng )火。煮到水快熬干的时(shí )候加入(rù )盐,翻炒均匀(yún )稍(shāo )收(shōu )汁时盖上锅盖焖。
