做法:春(chūn )笋切(qiē )成片后加少(shǎo )许盐捞出后用清水浸泡,生(shēng )姜(jiāng )切片,葱切(qiē )成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋(sǔn ),盖上锅盖大火煮开后转(zhuǎn )中火。煮到(dào )水快(kuài )熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖(gài )焖。
