做法(fǎ ):洗净宰好鲫鱼,洗净(jìng )淮山和薏米。用清水把陈皮泡软,拍裂(liè )一(yī )小块姜(jiāng ),热锅,用(yòng )姜块在锅上(shàng )擦(cā )一(yī )遍,放两勺油,待油六成热下(xià )鱼,煎至微(wēi )黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其(qí )他材料,武火煮沸,转(zhuǎn )中小(xiǎo )火煲一个半(bàn )小时,下(xià )盐调味即可品尝。
