做(zuò )法:春笋切成片后加(jiā )少许盐(yán )捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱切成(chéng )段。锅(guō )烧热,倒入(rù )2勺油,放入(rù )生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中(zhōng )火(huǒ )。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖(mèn )。
