做法:洗净宰好鲫鱼,洗净淮山和(hé )薏米。用清水把(bǎ )陈(chén )皮泡软,拍裂一小块姜(jiāng ),热(rè )锅,用姜块(kuài )在锅上擦(cā )一遍,放两(liǎng )勺油(yóu ),待油六成热(rè )下(xià )鱼,煎至微(wēi )黄。煮沸瓦煲(bāo )里的清水(shuǐ ),放(fàng )入(rù )煎(jiān )煮好的鲫鱼和其(qí )他材料,武火煮沸,转中小火煲一个半小时,下盐调味即可品尝。
