做法:春(chūn )笋切成片(piàn )后加少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入(rù )生(shēng )姜(jiāng )、春笋(sǔn )、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋,盖(gài )上(shàng )锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时(shí )候加入盐(yán ),翻炒均匀稍收汁(zhī )时盖上锅盖焖。
