做法:春笋切成片后加少许盐捞(lāo )出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加(jiā )入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖(gài )上(shàng )锅盖大(dà )火煮开后转(zhuǎn )中火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖(gài )焖。
