做法:春笋切成片后加少许盐捞出(chū )后用清水浸(jìn )泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入(rù )生(shēng )抽、老抽、蚝油(yóu )翻炒均(jun1 )匀(yún ),加(jiā )入少量清水半(bàn )掩住春(chūn )笋,盖上锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候(hòu )加(jiā )入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
