做法:春笋切成片后加少许(xǔ )盐(yán )捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩住(zhù )春笋(sǔn ),盖上(shàng )锅盖大火煮(zhǔ )开后转(zhuǎn )中火。煮(zhǔ )到水快熬干(gàn )的(de )时候加(jiā )入盐,翻炒均匀(yún )稍收汁时盖上锅盖(gài )焖。
