做(zuò )法(fǎ ):春笋切成片后(hòu )加少(shǎo )许盐捞(lāo )出后用(yòng )清水浸泡,生姜切片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖(gài )大火(huǒ )煮开后转(zhuǎn )中(zhōng )火。煮到水快熬干的时候(hòu )加入(rù )盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
