做(zuò )法:春笋切成片后(hòu )加少许盐捞出后用清水(shuǐ )浸泡,生姜切(qiē )片,葱(cōng )切成段。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油(yóu )翻炒均匀,加入少量清水半(bàn )掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快(kuài )熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
