做法:春笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生(shēng )姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛肉(ròu )片、葱段翻(fān )炒1分钟左右。再(zài )加入(rù )生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大(dà )火煮开后转中火。煮到水快熬干的时候(hòu )加(jiā )入盐,翻炒均匀稍(shāo )收汁(zhī )时(shí )盖上(shàng )锅盖(gài )焖(mèn )。
