做法:洗净宰好鲫鱼,洗净淮山和(hé )薏米。用清水把陈皮泡软,拍裂一(yī )小块姜,热(rè )锅,用(yòng )姜块在锅上(shàng )擦一遍,放两(liǎng )勺油,待油(yóu )六成热(rè )下鱼,煎至微黄(huáng )。煮沸瓦煲里(lǐ )的清水,放(fàng )入煎煮好的鲫鱼和其他材料(liào ),武火煮沸,转(zhuǎn )中小火煲一(yī )个半(bàn )小时,下盐调味即可(kě )品(pǐn )尝。
