做法(fǎ ):洗净宰好鲫鱼,洗净(jìng )淮山和薏米(mǐ )。用(yòng )清(qīng )水把陈皮泡软,拍裂一小块姜,热锅,用(yòng )姜块在锅(guō )上(shàng )擦一遍,放两勺油,待油六成(chéng )热下鱼,煎(jiān )至微黄(huáng )。煮沸瓦煲里的清水,放入煎煮好的鲫(jì )鱼和(hé )其他材料,武火煮(zhǔ )沸,转中小火煲一个半(bàn )小时(shí ),下盐调味即可品(pǐn )尝。
