做法:洗净宰(zǎi )好鲫鱼,洗净(jìng )淮(huái )山和(hé )薏(yì )米。用清水把陈皮泡软,拍裂(liè )一小(xiǎo )块(kuài )姜,热锅,用姜块在锅上擦一遍,放(fàng )两勺油,待油(yóu )六成热下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清(qīng )水,放入(rù )煎煮好的鲫鱼和其(qí )他材料,武火煮沸,转中(zhōng )小火煲(bāo )一个半小(xiǎo )时,下盐调味即可品尝(cháng )。
