做法:洗净宰(zǎi )好鲫鱼,洗净淮山和薏米。用清(qīng )水(shuǐ )把(bǎ )陈皮泡软,拍裂(liè )一小块姜,热锅(guō ),用(yòng )姜块在锅(guō )上(shàng )擦一遍,放两勺油(yóu ),待油六成热下(xià )鱼,煎至微黄。煮沸瓦(wǎ )煲里的清水,放入煎煮好的鲫鱼和(hé )其(qí )他材料(liào ),武(wǔ )火煮沸,转中小火煲一个半小时,下盐调味即可品尝。
