做(zuò )法:春笋切成片后(hòu )加少许盐捞(lāo )出(chū )后用(yòng )清(qīng )水浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到水快(kuài )熬干的时候加入盐,翻(fān )炒(chǎo )均匀稍收(shōu )汁时盖上(shàng )锅盖焖。
