做法:春(chūn )笋切成片后加(jiā )少许盐捞出后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽(chōu )、老抽(chōu )、蚝油翻炒均匀(yún ),加入(rù )少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快(kuài )熬干的时(shí )候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅(guō )盖焖(mèn )。
