做法:春笋(sǔn )切成片后加少许盐捞(lāo )出后用清水浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅(guō )烧(shāo )热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉(ròu )片、葱段翻炒1分钟(zhōng )左右。再(zài )加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时候(hòu )加入盐(yán ),翻(fān )炒均匀稍收(shōu )汁时(shí )盖上(shàng )锅盖焖。
