做法:春笋切成片后加少许(xǔ )盐捞出后用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清(qīng )水半掩住春笋,盖上(shàng )锅(guō )盖大火煮开(kāi )后转中火。煮到水快熬干的时(shí )候加入盐,翻(fān )炒均匀(yún )稍(shāo )收(shōu )汁时盖上锅盖焖。
