做法:春笋切成片后加少(shǎo )许盐捞出后用(yòng )清水(shuǐ )浸泡,生(shēng )姜切片,葱切(qiē )成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻(fān )炒(chǎo )均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮开(kāi )后(hòu )转(zhuǎn )中火。煮到水快(kuài )熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
