做法:春笋切成片后加少许盐(yán )捞出后用(yòng )清(qīng )水浸泡,生姜切(qiē )片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀(yún ),加入少量(liàng )清水(shuǐ )半掩住(zhù )春(chūn )笋,盖上锅盖大火煮开(kāi )后转中(zhōng )火。煮(zhǔ )到水(shuǐ )快熬干的时候(hòu )加入盐,翻炒(chǎo )均匀(yún )稍收汁时盖上锅盖焖(mèn )。
