做法:春笋切成片后加少许盐捞(lāo )出后用清(qīng )水浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱(cōng )段翻(fān )炒(chǎo )1分钟(zhōng )左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖(gài )上锅盖(gài )大火煮开后(hòu )转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
