做(zuò )法(fǎ ):春笋切成片后(hòu )加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量清水半掩住(zhù )春笋(sǔn ),盖上锅盖(gài )大火(huǒ )煮开后转中火。煮到(dào )水快熬干(gàn )的时候加入(rù )盐(yán ),翻炒(chǎo )均匀稍收汁时(shí )盖上锅盖焖。
