做法(fǎ ):洗净(jìng )宰(zǎi )好鲫鱼,洗净淮山和薏米(mǐ )。用清水把陈(chén )皮泡软(ruǎn ),拍裂一小块姜,热锅,用(yòng )姜块在锅上(shàng )擦一(yī )遍,放两勺油,待油(yóu )六成热(rè )下鱼,煎(jiān )至微黄。煮沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫鱼和(hé )其(qí )他材料,武火煮沸,转中(zhōng )小(xiǎo )火煲一个半小时,下盐调味即可品尝。
