做法:春笋切(qiē )成片(piàn )后加少许盐(yán )捞出后用(yòng )清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放入生(shēng )姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右(yòu )。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量清(qīng )水半掩住春笋,盖上锅盖大(dà )火(huǒ )煮(zhǔ )开后(hòu )转中火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收(shōu )汁时盖上锅(guō )盖焖。
