做法:春笋切成片后加少(shǎo )许盐捞(lāo )出后用清水浸(jìn )泡,生姜切(qiē )片,葱切(qiē )成段。锅烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转(zhuǎn )中火(huǒ )。煮到水快熬(áo )干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅(guō )盖焖。
