做法:春(chūn )笋切成片后加少许盐(yán )捞出后(hòu )用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热(rè ),倒(dǎo )入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅(guō )盖(gài )大火煮开(kāi )后转中火。煮到(dào )水快熬干的时候加入(rù )盐,翻炒均匀稍(shāo )收汁时(shí )盖(gài )上锅盖焖。
